How would you know? Have you gone to all of them, or is it just a local observation? We have two Chinese restaurants here, and they are both owned, and operated, by Chinese families. Same is true of most Chinese restaurants in Bend while they will have some different ethnic groups as waitresses, etc. And likewise in Portland. And yes, I have eaten in most of them.
